Gluten Flour

Vital wheat gluten is a flour that is mostly gluten with very little starch. Made from hydrated wheat flour that has been processed to remove everything but the gluten - this dried gluten is then worked back into a flour-like product. Due to the high gluten content - it makes a great addition to low-protein flours like whole wheat and rye and improves the elasticity and rise of bread dough while enhancing the chewiness of final loaves. To try this in your home-made bread - try adding one tablespoon of vital gluten to 2-3 cups of flour.
